Hello Reader,
Do you have a go-to summer breakfast? For me it's muesli topped with berries. In case you aren't familiar with muesli it's basically a simple combination of grains (like oats and rye flakes), nuts, seeds, and dried fruit. You could also add coconut flakes and spices like cardamom or cinnamon.
You can buy muesli at the store, but it's so easy to make on your own. You simply mix all the ingredients together and store in an airtight glass container. You can vary the ingredients depending on what you like or have on hand. These days I generally leave out the dried fruit because not everyone in my house is a fan.
I love to eat my muesli with a mix of plain full fat siggi's Skyr yogurt (similar to Greek yogurt) and a plant milk or kefir (a cultured milk). I usually add chia seeds and flax meal too before topping with berries and sometimes, a drizzle of honey. Raspberry chia jam is also a really delicious topping.
I sometimes eat it right away and other times like to let it sit for 30 minutes first. This allows the oats to soften and if there are chia seeds in the mix, gives them a chance to soak up some liquid too.
My 16-year old loves to have his muesli over a strawberry banana smoothie, like a smoothie bowl but with muesli instead of granola. Another tasty way to eat it!
I hope you are enjoying your breakfasts and making time for outdoor adventures during these last weeks of summer.
Happy Eating and Cooking!
~Maria
